Creamy Mushroom Risotto

Hey there everyone! Today I'm sharing my recipe for a deliciously creamy mushroom risotto!



Serving size: 4-6 people


Ingredients

6 cups Chicken/ Vegetable Stock

2 Tbsp Olive Oil

1 diced Onion

2 cloves Garlic; minced

2 Tbsp Butter

200g Exotic Mushrooms

1/4 cup Basil

1 1/2 cup Arborio Rice

1/2 cup White Wine

1 cup Parmesan Cheese

Salt to taste

Chopped Chives


Steps

Start off by boiling the stock and set aside.

Add olive oil to a pan and fry the onion and garlic 2-3 minutes.

Add butter and mushrooms and allow the mushrooms to become soft, 5-7 minutes.

Add the basil and Arborio rice and fry 2-3 minutes.

Add salt and white wine and allow all of the liquid to be absorbed.

Start adding the hot broth 2 soup ladles at a time, stirring continuously until the liquid is absorbed, then add the next 2 soup ladles, etc. This will take about 15-20 minutes for the rice to become al dente.

Add the parmesan cheese and allow it to melt.

Serve it with chopped chives, and enjoy!
