Hey there everyone! Today's recipe is this delicious tomato quinoa. Quinoa is a healthy seed/ grain which is rich in B vitamins, protein, fibres, and minerals. Its a healthy alternative to rice.

Ingredients
2 Tbsp Olive Oil
1 diced Onion
1 clove Garlic; minced)
1 cup Quinoa
1/2 can Crushed Tomatoes
1 cup Chicken/ Veggie Stock
1 cup Water
Chili Salt; optional
Salt to taste
Steps
Start off by frying onions in the olive oil 3-5 minutes.
Add minced garlic and fry until onions are translucent.
Add the quinoa, crushed tomatoes, chicken/ veggie stock, water and salt to taste and allow the quinoa to simmer for 15 minutes or until fluffy.
Add some mint to the quinoa for a pop of fresh flavour.
Serve and enjoy!
