Chicken Broccoli🥦 and Bacon🥓 Casserole

Hey the everyone! Today I am sharing the most delicious Casserole dish I've ever made! It's delicious, flavourful, and super healthy! I 100% recommend this recipe as it is sure to please the whole family. I made this dish twice in one week and my family was practically licking their plates!🤩



Serving size: 6 people


Chicken

Ingredients

2 Tbsp Olive Oil

900g Chicken Thighs; boneless

Salt to taste

Black Pepper to taste


Broccoli

Ingredients

Water

1/2 tsp Salt

1 head Broccoli


Egg Mixture

Ingredients

1/2 cup Butter; melted

1 cup Coconut Milk

1 Onion; finely diced

50g Parmesan Cheese; grated

6 Tbsp Cream

1 clove Garlic; minced

4 Eggs

125g Bacon


Steps

Preheat oven to 200ºC/ 392ºF.

In a large pan fry the chicken thighs in olive oil.

Season with salt and black pepper and cook 8-10 minutes.

In a pot boil the water and add salt. Add the broccoli and boil for 5 minutes.

To a large bowl add the melted butter, coconut milk, diced onion, parmesan cheese, cream, garlic and eggs. Whisk together until well combined.

Add the boiled broccoli, cooked chicken and egg mixture to the casserole dish and combine well.

Bake 200ºC/ 392ºF for 25-30 minutes.

Remove the dish from the oven and layer the bacon on top.

Grill on high for 5 minutes until bacon is crispy.

Serve and enjoy!
