Chicken Skewers with Satay Sauce

Hey everyone! Today I'll be sharing this delicious Chicken Skewers with Satay Sauce recipe. The chicken was tender and flavourful, and the Satay Sauce was delicious and thick.



Serving size: 4 people


Chicken Skewers

Ingredients

6 Chicken Breasts; cubed

1 tsp Cumin

1 Tbsp Dark Soy Sauce

Salt to taste

1 Tbsp Ginger; minced

2 cloves Garlic; minced

1/4 cup Coriander; chopped

400 mℓ Coconut Milk

2 Tbsp Vegetable Oil


Satay Sauce

Ingredients

2 Tbsp Vegetable Oil

1/2 cup Peanut Butter

3 Tbsp Brown Sugar

Chilli Flakes to taste

1 Tbsp Dark Soy Sauce

1 1/2 Tbsp Fish Sauce

200 mℓ Coconut Milk

1/4 cup Coriander; chopped


Steps

In a bowl, combine the cubed chicken, cumin, dark soy sauce, salt, ginger, garlic, coriander and coconut milk. Cover with Plastic Wrap and allow to marinate 1 hour in the refrigerator.

Soak your skewers in warm water for 30 minutes. This prevents them from burning when the chicken is being cooked.

In the mean time, prepare your Satay Sauce. In a small pot combine the vegetable oil, peanut butter, brown sugar, chilli flakes, dark soy sauce, fish sauce, coconut milk and coriander.

Cook over medium heat, continuously stirring until it thickens. Once thick, remove from the heat and set aside.

Once the chicken has marinated, pierce the cubed chicken pieces with the soaked skewers.

In a large frying pan, fry the skewered chicken in the vegetable oil until brown and fully cooked.

Serve the chicken skewers with chopped coriander, chilli flakes and chopped shallots and enjoy!
