Southern Fried Chicken🍗

Hey there everyone! Today I'm sharing my take on Jamie Oliver's Southern Fried Chicken Recipe. This chicken is crispy, flavourful and absolutely delicious! Be sure to try it out!



Serving size: 12-16 people


Brine

Ingredients

2 Tbsp Black Peppercorns

1600mℓ Water

150g Brown Sugar

5 sprigs Fresh Thyme

4 whole Bay Leaves

2 Tbsp Salt

4 cloves Garlic; minced


Chicken

Ingredients

16 Chicken Drumsticks

3 cups Buttermilk

3 cups Plain Flour

2 tsp Garlic Flakes

2 tsp Baking Soda

1 Tbsp Paprika

1 tsp Salt

1 Tbsp Cayenne Pepper

2 cups Vegetable Oil


Steps

Begin by toasting the black peppercorns in a large pot for 2-3 minutes. Add in 800mℓ water, brown sugar, thyme, bay leaf, salt and garlic and bring the water to a boil.

Once it has reached boiling point, turn off the heat and add the remaining 800mℓ of water.

Allow the water to cool down to room temperature.

Place your chicken drumsticks and cooled brine into a large dish. Cover and refrigerate for 12 hours.

Once refrigerated, remove the chicken from the brine and place it in another dish. To that, pour in the buttermilk, cover and refrigerate for another 8 hours.

In a large bowl, combine plain flour, garlic flakes, baking soda, paprika, salt and cayenne pepper.

Dredge the buttermilk brined chicken in the flour mixture and set aside.

Preheat the oven to 190°C/ 375°F.

To a large frying pan, add in the vegetable oil. Once the oil is hot, fry the chicken until gold and crispy. Remove from the oil and drain the excess oil.

Place the fried chicken into an oven-safe dish and bake for 35-40 minutes at 190°C/ 375°F. Serve and enjoy!
