Hey there everyone! Here's my recipe for an amazing chicken cacciatore. It has deliciously rich sauce and flavoursome chicken. This homey recipe pairs well with white rice.
It's an authentic Italian hunter style chicken stew, which was originally was made with whatever the peasants would hunt that day, hence the word "cacciatore," which translates to hunter. The meats they used would range from anything to pheasant, rabbit, pigeon, you name it!

Serving size: 4-6 people
Ingredients
1 kg Chicken Thighs
1 tsp Dried Oregano
1 tsp Chili Powder
2 cloves Garlic (minced)
4 Tbsp Olive Oil (separated)
1 diced Onion
250g sliced Mushrooms
2 Tbsp Tomato Paste
1 can Crushed Tomatoes
1/2 cup Red Wine
1 cup Chicken Stock
Salt to taste
Pepper to taste
Chopped Parsley
Steps
Begin by combining the chicken pieces, salt, pepper, dried oregano, chili powder and garlic in a large bowl and set aside.
In a pan, fry the onion in 2 Tbsp olive oil until translucent.
Add in the mushrooms and allow them to become soft, about 5-7 minutes.
Add in the tomato paste and cook for an additional 2 minutes, then remove everything from the pan.
In the same pan add 2 Tbsp Olive Oil. When hot, place the chicken, skin-side down, and fry until golden brown.
Add in the crushed tomatoes, mushrooms, red wine and chicken stock.
Allow to simmer 15 minutes.
Finish with chopped parsley and enjoy!
