Hey there everyone! Today I am sharing my recipe for the most delicious Greek Leg of Lamb. The meat it full of flavour, juicy and absolutely amazing!

Serving Size: 6 people
Ingredients
1 Leg of Lamb; tenderised to an even thickness
2 Tbsp Thyme; finely chopped
1/2 cup Olive Oil
1 Lemon; juice
2 tsp Black Pepper
3 cloves Garlic; minced
Salt to taste
Steps
In a bowl combine the olive oil, lemon juice, black pepper, thyme and garlic.
Salt the leg of lamb and place in a large bowl.
Pour the marinade over the lamb and ensure that it coats the meat fully. Marinate 3-4 hours, covered and refrigerated.
Preheat the oven to 175°C/ 350°F.
Place the meat in an oven-safe dish, pouring over the leftover marinade and roast in the oven for 45 minutes.
Serve and enjoy!
