Portuguese Chuck Roast

Hey there everyone! Today I'm sharing this amazing Portuguese Chuck Roast recipe. The roast is absolutely delicious, a meal sure to please your whole family.



Serving Size: 8-10 people


Ingredients

2 kilograms Chuck Roast

1\2 cup Red Wine

2 Tbsp Paprika

1 tsp Dried Oregano

3 Tbsp Tomato Paste

3 cloves Garlic; minced

3 Bay Leaves

3 Tbsp Olive Oil

1 diced Onion

1 diced Red Pepper

1 Carrot; peeled and cut in coins

100g sliced Chorizo

250g sliced Mushrooms

1 cup Water

Chopped Parsley

Peri-Peri to taste

Pepper to taste

Salt to taste


Steps

Begin by placing the chuck roast in a large bowl. Add the red wine, 1 tsp salt, paprika, dried oregano, tomato paste, peri-peri, garlic and bay leaves. Massage the marinade into the meat and allow to marinate for 2-3 hours.

Once marinated, season the roast with salt and pepper to taste.

To a large pan add in the olive oil and sear the roast on both sides.

Remove the roast and add in the onion, red pepper, carrot, chorizo and mushrooms.

When the onions and mushrooms are soft, add in the remaining marinade and water and allow it to cook down, 5-7 minutes.

Place the seared roast and vegetable mixture into an oven proof dish and cover with tin foil. Place in the oven at 180° for 3 hours, turning the meat occasionally.

Cut the cooked meat into slices and top it off with chopped parsley.

Serve and enjoy!
