Shrimp Thai Soup🍤

Hey there everyone! Today I'm sharing this delicious Shrimp Thai Soup recipe. It's a delicious meal to have when you are in the mood for something light, but has tons of flavour.



Serving Size: 6 people


Ingredients

3 Tbsp Olive Oil

1 diced Yellow Bell Pepper

1 stalk Lemongrass; finely sliced

2 Tbsp Ginger; minced

2 cloves Garlic; minced

1 tsp Cayenne Pepper

2 Tbsp Curry Powder

1 tsp Chili Powder

1 can Crushed Tomatoes

1 cup Chicken Stock

1 can Coconut Milk

500g Shrimp; peeled

1 Tbsp Fish Sauce

1 tsp Sugar


Steps

Begin by frying the bell pepper, lemongrass, ginger and garlic in olive oil for 2-3 minutes.

Add in the cayenne pepper, curry powder and chili powder.

Next pour in the crushed tomatoes and chicken stock and allow to simmer on medium-low heat for 10-15 minutes.

Once simmered, add in the coconut milk, sugar, shrimp and fish sauce and simmer until the shrimp are fully cooked and pink, 3-5 minutes.

Serve with coriander and chillies and enjoy!
