South African Malva Pudding

Hey there everyone! Today I’m sharing my recipe for this traditional South African dessert – Malva Pudding. It is so deliciously moist and decadent, and a huge crowd pleaser.



Serving size: 12 people


Malva Pudding

Ingredients

4 Eggs

375g Castor Sugar

6 Tbsp Apricot Jam

620g Cake Flour

1 pinch Salt

2 tsp Baking Soda

1 cup Milk

60g Butter; melted

2 Tbsp White Vinegar



Sauce

Ingredients

250g Butter

500 mℓ Cream

320 mℓ Water; hot

320g White Sugar


Steps

Preheat the oven to 180°C/ 356°F.

In a large bowl, beat together the eggs and castor sugar until light and fluffy.

Add in the apricot jam and beat well to incorporate.

In a separate bowl sift together the cake flour, salt, and baking soda.

In another bowl combine the milk, melted butter and vinegar.

Add in the wet and dry ingredients to the egg and sugar mixture, alternating between the two and beating between each alternation.

Add the batter to a greased baking dish and bake 40-45 minutes; 180°C/ 356°F.

In a pot, add in the butter, cream, water, and white sugar.

Allow everything to melt together.

When the pudding is done baking, prick many small holes into it with a fork. Pour all the sauce over the cake.

Serve and enjoy!
