    Hey everyone! Today I'm sharing this delicious Portuguese Campfire Chicken. The chicken is succulent and flavourful, and unbelievably easy to make. It's great for the whole family and pairs well with rice or bread. Video link: https://youtu.be/XrvOqjguHVU Serving size: 4-6 people Ingredients 1 kg Chicken Pieces 3 cloves Garlic; minced 3 Bay Leaves 2 Tbsp Salt 2 Tbsp Paprika 1 Lemon; juice Peri-Peri Sauce; optional Steps In a large dish combine the chicken pieces, garlic, bay leaves, salt, paprika and lemon juice. Marinate 2-3 hours. Place the chicken on a grid, and cook over hot coals for about 45 minutes, turning frequently. The chicken can also be made in an oven at 180° C/ 350° F for 45-60 minutes.

    Hey everyone! Today I'm sharing my amazing Swedish Spaghetti and Meatballs recipe. It’s creamy, beefy, cheesy and everything you'd possibly want in a meal. Video link: https://youtu.be/a9RhNsT_xVs Serving size: 6 people Ingredients 1kg Beef Mince 2 cloves Garlic; minced 1 tsp Black Pepper 1/2 cup Bread Crumbs 1 Egg 1/2 Red Onion; finely diced 2 Tbsp Salt 1/4 cup Parsley; chopped 2 Tbsp Olive Oil 2 cups Beef Stock 1 cup Cream 1 packet Spaghetti; cooked to package directions 1/4 cup Parmesan Cheese; grated Steps To a large bowl add the beef mince, garlic, black pepper, bread crumbs, egg, diced red onion, 1 Tbsp salt and parsley. Combine well. Roll the meat into golf-sized meatballs. In a large pot, fry the meatballs in olive oil until golden brown, about 5-7 minutes. Add the beef stock, cream and 1 Tbsp Salt to the fried meatballs, and allow the sauce to simmer 3-5 minutes. Add in your cooked spaghetti and parmesan cheese and incorporate well into the sauce. Finish with some more parmesan cheese and parsley and enjoy!

  • Cajun Calamari Strips

    Hey there everyone! Today I'm sharing my recipe for these delicious Cajun Calamari Strips. They're so tender and flavourful, and extremely simple to make! Video link: https://youtu.be/jcYJFFhrjPM Serving size: 4 people Ingredients 1 cup Plain Flour 1/2 tsp Chili Powder 2 tsp Black Pepper 1 Tbsp Cumin 1 Tbsp Paprika 2 cloves Garlic; minced 4 Calamari Steaks; cut into strips 5 Tbsp Canola Oil Steps In a large bowl combine the flour, chili powder, black pepper, cumin, paprika and minced garlic. Coat the calamari strips well in the flour mixture. To a large frying pan, add the canola oil. Once the oil is hot, fry the coated calamari 2 minutes per side until golden brown. Finish off with some Tartar Sauce and chips and enjoy!

  • Honey Garlic Salmon

    Hey there everyone! Today I'm sharing my amazing Honey Garlic Salmon recipe. It's extremely flavourful and quick to make! Video link: https://youtu.be/KfpO8twKepI Serving size: 4-6 people Ingredients 2 Salmon Steaks 1 Tbsp Salt 1 Tbsp Paprika 3 Tbsp Butter 2 cloves Garlic; minced 2 Tbsp Honey 1 Tbsp Water 3 Tbsp Soy Sauce 1 Lemon Chopped Parsley Steps Preheat the oven to 180°C/ 350°F. Sprinkle the salt and paprika over the salmon steaks and set aside. To a small sauce pan add 2 Tbsp butter and allow to melt. Add in the garlic, honey, water, soy sauce and half of the juice of a lemon, and allow to bubble 2-3 minutes. In a large frying pan add in 1 Tbsp butter and fry the salmon steaks skin side down for 1-2 minutes. Add the salmon steaks and sauce to an oven safe dish, and top with slices of the remaining half lemon. Roast in the oven 7-9 minutes at 180°C/ 350°F. Serve with the side of your choice and top with some chopped parsley. Enjoy!
