- South African Malva Pudding
Hey there everyone! Today I’m sharing my recipe for this traditional South African dessert – Malva Pudding. It is so deliciously moist and decadent, and a huge crowd pleaser. Video link: https://youtu.be/F3Ff7SyX3pk Serving size: 12 people Malva Pudding Ingredients 4 Eggs 375g Castor Sugar 6 Tbsp Apricot Jam 620g Cake Flour 1 pinch Salt 2 tsp Baking Soda 1 cup Milk 60g Butter; melted 2 Tbsp White Vinegar Sauce Ingredients 250g Butter 500 mℓ Cream 320 mℓ Water; hot 320g White Sugar Steps Preheat the oven to 180°C/ 356°F. In a large bowl, beat together the eggs and castor sugar until light and fluffy. Add in the apricot jam and beat well to incorporate. In a separate bowl sift together the cake flour, salt, and baking soda. In another bowl combine the milk, melted butter and vinegar. Add in the wet and dry ingredients to the egg and sugar mixture, alternating between the two and beating between each alternation. Add the batter to a greased baking dish and bake 40-45 minutes; 180°C/ 356°F. In a pot, add in the butter, cream, water, and white sugar. Allow everything to melt together. When the pudding is done baking, prick many small holes into it with a fork. Pour all the sauce over the cake. Serve and enjoy!

Video link: https://youtu.be/HP0_KQFOnbA Serving size: 16 people Dough Ingredients 300g Cake Flour 7g Instant Yeast 9g Baking Powder 70g White Sugar 2 Tbsp Vegetable Oil 150 mℓ Water Filling Ingredients 500g Pork Mince 2 cloves Garlic; minced 1 Tbsp Ginger; grated 3 Spring Onions; finely sliced 3 Tbsp Coriander; finely chopped 1/2 tsp White Sugar 1/2 tsp Salt 1/4 tsp White Pepper 1 Chicken Stock Cube; crumbled 1 Tbsp Soy Sauce 1/4 cup Water 2 tsp Vinegar To Fry Ingredients 1 Tbsp Vegetable Oil 1/4 cup Water Steps In a large bowl combine the flour, instant yeast, baking powder and sugar. Create a well in the centre of the dry ingredients and pour in the vegetable oil and water. Bring the dough together, and once combined well enough, begin kneading on a clean work surface for 10 minutes. If you poke your finger in the dough and it springs back up, the dough is ready. Place the dough in a bowl and cover. Rest for 1 hour in a warm place. In another large bowl combine the pork mince, garlic, ginger, spring onions, coriander, white sugar, salt, white pepper, chicken stock cube, soy sauce, water and vinegar. On a floured surface, roll out the dough, fold in half and roll out again. Repeat another 2 times. Then roll the dough into a log and divide it into 16 pieces. Roll each piece into a small ball and then roll it out with a rolling pin. Roll the edges of each piece slightly thinner than the centre. Place a small amount of the pork filling, (about 1 tablespoon) into the centre of the dough and close it by creating pleats. Pinch the top of the bun closed. In a large frying pan, fry the bottoms of the buns in the vegetable oil until golden brown. Pour in the water and cover with a lid. The buns will finish steaming once all of the water is evaporated. Serve with sliced spring onions, soy sauce and chilli oil and enjoy!

They’re a huge crowd pleaser and your whole family is sure to enjoy. Video link: https://youtu.be/oaikI-HR9YE Serving size: 4-6 people Ingredients 1 ½ cups Flour ½ tsp Baking Soda ½ tsp Salt ½ cup Water; warm 40 mℓ Vegetable Oil Steps Combine the flour, baking soda and salt in a large bowl. Create a well in the centre of the flour. Pour the warm water and vegetable oil into the well and mix, slowly bringing in the flour until roughly incorporated. Continue incorporating the remaining flour into the dough on a clean workbench. Knead the dough 1-2 minutes, then divide it into 8 pieces. Roll each piece into a ball and roll it out with a rolling pin until thin. Cover the tortillas with a cloth for 15 minutes. Cook the tortilla on a non-stick pan, 1-2 minutes per side, or until brown spots begin to form. Serve and enjoy! Slowly add water to the mixture until it reaches the consistency of pancake batter. Add in the cubed chicken, coating every piece well with the batter. Cover and refrigerate for 30 minutes. Add the vegetable oil, chilli flakes, ginger and garlic to a pan and fry 2-3 minutes. Add the brown sugar and orange juice. Combine the cornstarch and water in a small bowl. Add the white vinegar, soy sauce and water-cornstarch mixture to the pan and stir until it thickens. Fry the battered chicken in a pot of hot vegetable oil for 6 minutes, until golden brown. Drain the excess oil and add the chicken to the sauce. Ensure that each piece is fully coated in sauce. Serve with parsley or spring onions and enjoy!

Salt the leg of lamb and place in a large bowl. Pour the marinade over the lamb and ensure that it coats the meat fully. Marinate 3-4 hours, covered and refrigerated. Preheat the oven to 175°C/ 350°F. Place the meat in an oven-safe dish, pouring over the leftover marinade and roast in the oven for 45 minutes. Serve and enjoy!

Once melted, add in the condensed milk and sifted cocoa powder and mix until fully incorporated. Stir continuously until you can see the bottom of the pan for 2-3 seconds when dragging the spatula through. Spread the mixture out on a greased plate and cover with plastic wrap. Allow to cool to touch and refrigerate for an additional 2-3 hours. Shape and roll the cooled mixture into small balls and coat in cocoa powder or sprinkles. Serve and enjoy!

Video link: https://youtu.be/zU_Hy8IZs4U Serving size: 4 people Marinade Ingredients 3 cloves Garlic; minced 1/3 cup Spring Onions 2 sprigs Dill; finely sliced 1 Tbsp Turmeric 1 tsp Curry Powder 1 tsp Sugar 2 Tbsp Vegetable Oil 1/4 cup Fish Sauce 800g White Fish Fillets; sliced into 4cm wide strips Fish Ingredients 2 Tbsp Vegetable Oil 2 Tbsp Water 4-5 sprigs Dill 1/2 Lime; juice Sliced Spring Onions Sliced Red Chillies Steps Start by blending together the garlic and spring onions until a paste forms. In a bowl combine the spring onion and garlic paste, dill, turmeric, curry powder, sugar, vegetable oil, and fish sauce to make the marinade. Add in the fish strips and and ensure that every piece is fully coated in the marinade. Fry the fish strips in the vegetable oil, 2-3 minutes on each side. Once fried, add in the water and cover 2-3 minutes. Add in the sprigs of dill and lime juice. Serve with sliced red chillies and spring onions and enjoy!

It's filled with so many flavours, creamy cheesy pasta, and juicy pieces of chicken. You definitely need to try this at home! Video link: https://youtu.be/QDyUJmWgR94 Serving Size: 6 people Chicken Ingredients 5 Chicken Breasts; cubed 1 Tbsp Smoked Paprika 1 Tbsp Chilli Powder 1 Tbsp Cajun Spice 1 tsp Black Pepper 2 cloves Garlic; minced 1 tsp Salt Juice of 1/2 Lemon 1/4 cup Plain Yogurt 2 Tbsp Olive Oil Pasta Ingredients 1 Brown Onion; diced 1 Yellow Pepper; diced 1 Tomato; diced 2 cloves Garlic; minced 1 Tbsp Tomato Paste 1 cup Pasta Water 1 cup Cream 1 Tbsp Paprika 1 1/2 Tbsp Cajun Spice Chilli Flakes to taste 1 Chicken Stock Cube; crushed 1 cup Mozzarella Cheese; grated 500g Penne Pasta; cooked Parsley; chopped Steps Begin by combining the cubed chicken breasts, smoked paprika, chilli powder, Cajun spice, black pepper, garlic, salt, lemon juice and yogurt in a bowl. Cover and refrigerate for 1 hour. Fry the chicken in the olive oil until golden brown and fully cooked, 5-7 minutes. Remove the chicken from the pan and fry the diced onion, yellow pepper, tomato and garlic in the remaining oil, until translucent. Add in the tomato paste and fry 2-3 minutes. Add in the pasta water, cream, paprika, Cajun spice, chilli flakes and crushed chicken stock cube and combine well. Add in the mozzarella cheese until fully melted. Add in the cooked pasta and chicken and combine. Finish with chopped parsley and enjoy!

Hey everyone! Today I'll be sharing this delicious Chicken Skewers with Satay Sauce recipe. The chicken was tender and flavourful, and the Satay Sauce was delicious and thick. Video link: https://youtu.be/pyLvnXUGeY4 Serving size: 4 people Chicken Skewers Ingredients 6 Chicken Breasts; cubed 1 tsp Cumin 1 Tbsp Dark Soy Sauce Salt to taste 1 Tbsp Ginger; minced 2 cloves Garlic; minced 1/4 cup Coriander; chopped 400 mℓ Coconut Milk 2 Tbsp Vegetable Oil Satay Sauce Ingredients 2 Tbsp Vegetable Oil 1/2 cup Peanut Butter 3 Tbsp Brown Sugar Chilli Flakes to taste 1 Tbsp Dark Soy Sauce 1 1/2 Tbsp Fish Sauce 200 mℓ Coconut Milk 1/4 cup Coriander; chopped Steps In a bowl, combine the cubed chicken, cumin, dark soy sauce, salt, ginger, garlic, coriander and coconut milk. Cover with Plastic Wrap and allow to marinate 1 hour in the refrigerator. Soak your skewers in warm water for 30 minutes. This prevents them from burning when the chicken is being cooked. In the mean time, prepare your Satay Sauce. In a small pot combine the vegetable oil, peanut butter, brown sugar, chilli flakes, dark soy sauce, fish sauce, coconut milk and coriander. Cook over medium heat, continuously stirring until it thickens. Once thick, remove from the heat and set aside. Once the chicken has marinated, pierce the cubed chicken pieces with the soaked skewers. In a large frying pan, fry the skewered chicken in the vegetable oil until brown and fully cooked. Serve the chicken skewers with chopped coriander, chilli flakes and chopped shallots and enjoy!
