  • Spicy Lamb Chops and Creamy Mashed Potatoes

    Hey there everyone! Today I'm sharing my recipe for these delicious spicy lamb chops and my ultimate, creamiest mashed potatoes. This is an great meal for you and your family to enjoy, and it's super quick and easy to make! Video link: https://youtu.be/Mf6A596Ukt4 Serving Size: 6 people Spicy Lamb Chops Ingredients 2 tsp Cumin Seeds 3 Tbsp Soy Sauce 1 Tbsp Hoisin Sauce 1 1/2 tsp Salt 10 Lamb Chops 1 clove Garlic; minced 1 tsp Chili Powder 1 Tbsp Vegetable Oil (canola or sunflower) Chopped Spring Onions Chopped Coriander Steps Begin by crushing the cumin seeds with a mortar and pestle. To a large bowl add in the soy sauce, hoisin sauce, garlic, 1 tsp salt and 1 tsp of the crushed cumin seeds. Combine and add in the lamb chops. Cover and marinate for 1 hour. To a pan add the vegetable oil and cook the lamb chops for 7-10 minutes. In a bowl add the remaining 1 tsp crushed cumin seeds, chili powder and 1/2 tsp salt. Top the lamb chops off with the spice powder, chopped spring onions and coriander. Serve and enjoy! Creamy Mashed Potatoes Ingredients 6 Peeled Potatoes 1 Tbsp Salt 1/2 cup Butter 1/2 cup Cream 3 sprigs Rosemary Steps Begin by cutting the potatoes into smaller pieces. To a pot of water, add the salt and potatoes. Bring to a simmer and then lower the heat to medium. The potatoes will be ready when fork tender. Drain the water and mash the potatoes until creamy. Add the butter and stir until fully combined. A dd the cream and stir until fully combined. Add the rosemary and mix. Serve these creamy potatoes and enjoy!

  • Creamy Mushroom Risotto

    Hey there everyone! Today I'm sharing my recipe for a deliciously creamy mushroom risotto! Video link: https://youtu.be/qSLcPivu19A Serving size: 4-6 people Ingredients 6 cups Chicken/ Vegetable Stock 2 Tbsp Olive Oil 1 diced Onion 2 cloves Garlic; minced 2 Tbsp Butter 200g Exotic Mushrooms 1/4 cup Basil 1 1/2 cup Arborio Rice 1/2 cup White Wine 1 cup Parmesan Cheese Salt to taste Chopped Chives Steps Start off by boiling the stock and set aside. Add olive oil to a pan and fry the onion and garlic 2-3 minutes. Add butter and mushrooms and allow the mushrooms to become soft, 5-7 minutes. Add the basil and Arborio rice and fry 2-3 minutes. Add salt and white wine and allow all of the liquid to be absorbed. Start adding the hot broth 2 soup ladles at a time, stirring continuously until the liquid is absorbed, then add the next 2 soup ladles, etc. This will take about 15-20 minutes for the rice to become al dente. Add the parmesan cheese and allow it to melt. Serve it with chopped chives, and enjoy!

    Hey there everyone! Today I'm sharing this delicious butternut squash fries recipe. This is a much healthier alternative to normal potato fries, and taste JUST AS GOOD. Video link: https://youtu.be/hg95SDQa8Eo Serving size: 4 people Ingredients 1kg Butternut Squash 1 Tbsp Paprika 2 tsp Cinnamon 2 tsp Garlic Flakes/ Garlic Powder 1 tsp Mustard Powder 2 Tbsp Brown Sugar 3 sprigs Thyme 2 Tbsp Olive Oil Salt to taste Pepper to taste Steps Preheat oven to 200°C/ 390°F. Start off by cutting the butternut squash into chip sized pieces and place in an oven-safe dish. Add paprika, cinnamon, garlic flakes, salt, pepper, mustard powder and brown sugar and combine. Add thyme and olive oil and combine. Cook in the oven for 45 minutes at 200°C/ 390°F. Serve with a dipping sauce of your choice and enjoy!

  • Condensed Milk Ice Cream

    Hey there everyone! Today I'm sharing my mom's famous condensed milk ice-cream recipe. Its only 3-ingredients (with the optional vanilla essence, but I highly recommend that you add it), and requires no machine (BONUS!!). It's super easy to make, with only 3 ingredients! The condensed milk can also be replaced with caramel to make a caramel ice cream, which is equally as good! Video link: https://youtu.be/rPaXDHrLpxk Serving size: 6-8 people Ingredients 350 mℓ Condensed Milk 250 mℓ Whipping Cream 4 Egg Whites 1 tsp Vanilla Essence Steps In a bowl, beat the condensed milk for 2-3 minutes. In another bowl, whip the cream until fluffy and stiff peaks form. In another bowl, beat the egg whites until stiff peaks form. Pour the whipped condensed milk into the whipped cream and combine well. Fold in egg whites with a metal spoon. Add the vanilla essence and mix. Freeze overnight, and enjoy!

If you'd like a vegetarian option, try swapping out the chicken for 250g sliced mushrooms. Video link: https://youtu.be/3Dl4_42_E5w Serving size: 6 people Ingredients 250g Linguine Pasta; cooked to package directions Salt to taste 3 Tbsp Olive Oil 500g Chicken; cubed Salt to taste Pepper to taste 1 Tbsp Butter 1 Onion; finely diced 2 cloves Garlic; minced 375mℓ Cream Chopped Parsley Steps To a pot add 2 Tbsp of olive oil. Add chicken and season with salt and pepper to taste. Remove chicken. In the same pan, add 1 Tbsp olive oil and butter. Add onion and garlic and fry until soft. Add cream, pasta and chicken. Combine well and garnish with parsley. Serve and enjoy!

Add minced garlic and fry until onions are translucent. Add the quinoa, crushed tomatoes, chicken/ veggie stock, water and salt to taste and allow the quinoa to simmer for 15 minutes or until fluffy. Add some mint to the quinoa for a pop of fresh flavour. Serve and enjoy!

    Hey there everyone! Today I'm sharing my recipe for the world's BEST chocolate caramel lava cakes. I first made this decadent dessert with my sister and it's an absolute WINNER!!! Its a flour-less dessert, as well as super east to make. It will not fail to impress. Video link: https://youtu.be/UANwu2iF0rY Serving size: 4 people Ingredients 100g Dark Chocolate 1/2 cup Butter 3 Eggs 1/3 cup Sugar 1 tsp Vanilla Essence 4 Tbsp Caramel Steps Preheat oven to 220°C/ 420°F. Chop dark chocolate into small pieces. Add to a bowl with butter and microwave at 30 second intervals until smooth. Set aside to cool. In another bowl add eggs, sugar and vanilla essence. Whisk to combine. Add chocolate mixture and mix together. Grease 4 ramekins and fill half way with the mixture. Add 1 Tbsp of caramel per ramekin and top with the rest of the chocolate mixture. Bake in oven 10-12 minutes, 220°C/ 420°F. Serve with whipped cream and enjoy!

    Hey everyone! Today I thought I’d share my Dad’s famous chicken rice. I figured there would be no better name to give it other than 'Dad’s Famous Chicken Rice' because it’s his signature dish!😁 This recipe is so simple but so yummy and delicious. I guarantee the whole family will love it! This dish is very special to me as it reminds me of the special memories I have with my family on our camping trips. My dad always makes it in his special black pot on the campfire, and it never fails to impress! Video link: https://youtu.be/P_xt38uY5Q4 Serving size: 6-8 people Ingredients 125g Bacon 3 tbsp Olive Oil 1 Onion; diced 2 cloves Garlic; minced 1kg Chicken Pieces 800 mℓ Water 2 cups Rice (although I use 1 cup of rice in the video, 2 cups is a better ratio to the amount of chicken used for this recipe). 250g Mushrooms Salt to taste Steps Start by frying bacon, do not add oil. Remove the bacon and add olive oil. Fry onion 3-4 minutes and add garlic. Add chicken pieces and allow them to brown. Add 100mℓ water and cover 2-3 minutes. Repeat this step 3 times. Add salt and bacon. Add rice and fry 2-3 minutes. Add 500mℓ water and cook rice. Add mushrooms until cooked, 5-7 minutes. Serve and enjoy! If you're planning on making this on the campfire (the traditional way, just like my dad makes it), follow the same steps, making it in a "fire safe" pot! The traditional black pot:

  • Chicken, Chorizo and Prawn Paella

    Hey everyone! Today I'm sharing my recipe for the most delicious and flavourful chicken, chorizo and prawn paella out there. Video link: https://youtu.be/hKAumQmIY0g Serving size: 4-6 people Ingredients 50g Chorizo; sliced 400g Chicken; cubed 300g Prawns 1 Tbsp Paprika 1 tsp Black Pepper 1 tsp Salt 1 1/2 Tbsp Olive Oil 1 Onion; finely diced 1 Red Pepper; diced 2 cloves Garlic; minced 1 can Crushed Tomatoes 1 cup Rice 1/4 cup White Wine 2 cups Chicken Stock 1 tsp Turmeric 1/4 cup Peas 1/4 cup Olives Parsley Lemon wedges Steps Begin by frying the chorizo in a large pan, 3-5 minutes. Do not fry in any oil. Remove the chorizo and add in the cubed chicken pieces. Add in the paprika, salt, black pepper, and 1/2 tsp olive oil if necessary. Cook 5-7 minutes, until brown and remove. Add 1 Tbsp olive oil, the diced onions, red pepper and minced garlic and fry 3-5 minutes. Add in the crushed tomatoes, salt to taste, rice, white wine, chicken stock and turmeric and cover with a lid. Cook 10 minutes. Add the peas, prawns and olives. Cook until the prawns turn pink. Add back the chicken and chorizo. Finish with chopped parsley and lemon wedges and enjoy!
