  • Chicken Curry and Naan Bread

    Hey there everyone! Today I'm sharing this flavoursome chicken curry recipe, along with a YOGHURT FREE naan bread for those of you who don’t have yoghurt at home. Video link: https://youtu.be/C9hQsMNPU14 Serving size: 4 people Chicken Curry Ingredients 1 tsp Salt 1 tsp Dried Coriander 1 Tbsp Turmeric 1 tsp Cayenne Pepper 1 Tbsp Cumin 1 tsp Mustard Powder 1 tsp Cardamom 1 Tbsp Paprika 600g Chicken Pieces (boneless) 1 Tbsp Ginger 1 Tbsp Garlic 4 Tbsp Olive Oil (separated) 1 diced Onion 1 Tbsp Tomato Paste ¾ can Crushed Tomatoes ¾ cup Chicken Stock 3 Tbsp Cream Steps Combine salt, dried coriander, turmeric, cayenne pepper, cumin, mustard powder, cardamom, and paprika in a bowl. Place chicken in a large bowl. Add ginger, garlic, and half of the spice mixture. Cover, refrigerate and marinate 1 hour. After marinating, fry chicken with 2 Tbsp olive oil. In a separate pan add 2 Tbsp olive oil, onion, remaining spices, tomato paste and fry 3-5 minutes. Add the cooked chicken, crushed tomatoes and chicken stock. Cover and allow to simmer for 30 minutes. After simmering, add cream and combine. Serve and enjoy! Naan Bread Ingredients 2 cups Flour 1 tsp Salt 1 tsp Instant Yeast 310 mℓ Water Steps In a mixing bowl add flour, salt, yeast and water. Use a stand mixer to combine the dough until it forms a ball. Remove the dough a knead 7-10 minutes. Cover with a warm towel and allow to rise for 1 hour. Flour a surface and form small dough balls. Roll out the dough balls thinly. Place onto a non-stick pan and cook until golden brown.

They are so yummy and super quick to make!😊 Video link: https://youtu.be/w046Q86n44U 3-Ingredient Sticky Pork Ingredients: 1/2 cup Soy Sauce 1/4 cup Brown Sugar 500g Pork Rashers Steps Combine the soy sauce and brown sugar in a bowl. Lightly brush sauce onto the pork rashers. Fry the pork rashers until fully cooked, continuously brushing rashers with the sauce, about 10-12 minutes. Serve and enjoy! Portuguese Pork Rashers Ingredients 500g Pork Rashers 1 Tbsp Paprika 3 Bay Leaves 2 cloves Garlic (minced) 2 Tbsp Olive Oil 1/3 cup White Wine Juice of 1 Lemon Salt to taste Steps Place pork rashers in an oven-safe dish and add salt, paprika, bay leaves, garlic, olive oil, white wine and lemon juice. Cook in the oven at 180°C/ 356°F for 35-45 minutes. Serve and enjoy! Orange Ginger Pork Rashers Ingredients 500g Pork Rashers 2 Tbsp Olive Oil 1 cup White Wine 1 cup Orange Juice 1/4 cup Brown Sugar 2 cloves Garlic; minced 2 Tbsp Ginger; minced Salt to taste Pepper to taste Steps Sprinkle salt and pepper over the pork rashers. In a pan, add olive oil, and fry pork rashers until golden. Remove and finish off in the oven at 180°C/ 356°F for 30 minutes. In the hot pan, add white wine, orange juice, brown sugar, garlic, ginger, and salt to taste. Simmer sauce for 15 minutes. When pork rashers are cooked, add back into the pan and cook in sauce for 5 minutes. Serve and enjoy!

Its got the most delicious sauce, tender beef, and serves for a heavenly meal when paired with butter smothered bread. Add in the beef cubes and fry until golden brown, 5-7 minutes. Add white wine, chicken stock, tomato paste, paprika, bay leaves, salt and pepper. Simmer the meat for 20 minutes. Serve and enjoy!

In a large bowl, combine the salted pork chops, fish sauce, sugar, black pepper, garlic and lemongrass. To a pan, add the vegetable oil and fry the pork chops until they are golden brown. When browned, place them in an oven-safe dish and bake in the oven at 175°C/ 347°F for 20-25 minutes. In a small bowl, combine the spicy dipping sauce ingredients to serve alongside the pork chops. Slice the pork chop into strips and serve with the spicy dipping sauce and chopped coriander. Enjoy!

The recipe is super simple and will surely have people coming back for more! Oh, and did I mention that it only requires 3 ingredients?😉 Video link: https://youtu.be/5nC6KhPNmqs Serving size: 10-12 people Ingredients 3 cups Whipping Cream 1 can Condensed Milk 275g Shortbread/ Eet Sum Mor Biscuits Steps In a large bowl whip the whipping cream until soft peaks form. Add in the condensed milk and whip until stiff peaks form and the condensed milk is fully incorporated. Add the biscuits to a blender and blend into fine crumbs. To a serving glass, add the cream mixture and biscuits, alternating between layers until the glass is full. End with a layer of the cream mixture and sprinkle with a few crumbs on top. Cover with plastic wrap and chill in the fridge for 3-4 hours/ overnight. Serve and enjoy!

Add the chicken pieces and mix until they are fully coated. To a pot add the remaining vegetable oil and chicken, and fry until it is fully cooked. Once cooked, sprinkle grated cheese over the top and cover with a lid to melt. When melted, garnish with spring onions and serve!

Video link: https://youtu.be/CUohMIvA3wE Serving size: 4-6 people Ingredients 1 diced Brown Onion 2 Spring Onions; sliced 3 Eggs; whisked 1 Tbsp Sugar 2 Tbsp Soy Sauce 2 Tbsp Olive Oil 2 cloves Garlic; minced 1 Tbsp Ginger; minced 500g Pork Fillet; cubed 1/2 tsp Salt 1 1/2 cup Long Grain Rice; cooked 1 tsp Black Pepper; ground 1 tot Chinese Shaoxing Wine Steps Begin by dicing the brown onion and slicing the spring onions. Separate the pale part from the green part of the spring onions. Whisk the eggs together in a bowl. In another bowl mix together the sugar, soy sauce, pepper and Chinese Shaoxing wine. Add olive oil to a large pan/ wok. Fry the onion and spring onions (pale part) for 2-3 minutes. Add in the garlic and ginger and fry for another minute. Add the cubed pork, sprinkle with salt and allow it to cook fully and brown. Push everything to the side and pour in the whisked eggs. Allow the eggs to scramble and mix into the pork. Add in the cooked long grain rice and soy sauce mixture and mix. Finnish off with sliced spring onions (green part). Serve and enjoy!

Video link: https://youtu.be/v-B0BZL6Jlw Serving Size: 4-6 people Chicken Ingredients 1 kg Chicken Drumsticks 2 Tbsp Olive Oil 1 Spring Onion; pale part finely sliced; green part sliced into large wedges 1 White Onion; halved and sliced 1 pinch Salt 1 clove Garlic; minced 1/4 cup Water 4 Bay Leaves Chilies; sliced Marinade Ingredients 3/4 cup Apple Cider Vinegar 1/3 cup Soy Sauce 3 Tbsp Brown Sugar 1 tsp Black Pepper 1 Tbsp Ginger; minced 1 clove Garlic; minced Steps Begin by combining the marinade ingredients in a bowl. Pour the marinade over the chicken, combine and allow to marinade for 30-45 minutes. Add 1 Tbsp olive oil to a large pan. Shake the excess marinade off the marinated chicken and allow it to brown in the pan. Once browned, remove from the pan. Add the remaining olive oil, pale spring onion, white onion, salt and garlic to the pan and allow the onions to become brown in colour. Once brown, add in the chicken, remaining marinade, water and bay leaves. Cover and allow the chicken to simmer for 30 minutes. Serve with steamed rice, sliced chilies and spring onions and enjoy!

    Hey there everyone! Today I'm sharing this amazing Portuguese Chuck Roast recipe. The roast is absolutely delicious, a meal sure to please your whole family. Video link: https://youtu.be/4JcEXh-9yQA Serving Size: 8-10 people Ingredients 2 kilograms Chuck Roast 1\2 cup Red Wine 2 Tbsp Paprika 1 tsp Dried Oregano 3 Tbsp Tomato Paste 3 cloves Garlic; minced 3 Bay Leaves 3 Tbsp Olive Oil 1 diced Onion 1 diced Red Pepper 1 Carrot; peeled and cut in coins 100g sliced Chorizo 250g sliced Mushrooms 1 cup Water Chopped Parsley Peri-Peri to taste Pepper to taste Salt to taste Steps Begin by placing the chuck roast in a large bowl. Add the red wine, 1 tsp salt, paprika, dried oregano, tomato paste, peri-peri, garlic and bay leaves. Massage the marinade into the meat and allow to marinate for 2-3 hours. Once marinated, season the roast with salt and pepper to taste. To a large pan add in the olive oil and sear the roast on both sides. Remove the roast and add in the onion, red pepper, carrot, chorizo and mushrooms. When the onions and mushrooms are soft, add in the remaining marinade and water and allow it to cook down, 5-7 minutes. Place the seared roast and vegetable mixture into an oven proof dish and cover with tin foil. Place in the oven at 180° for 3 hours, turning the meat occasionally. Cut the cooked meat into slices and top it off with chopped parsley. Serve and enjoy!

  • Chinese Pork & Ginger Stir-Fry

Video link: https://youtu.be/7aCEmFOHcpw Serving Size: 4 people Pork Ingredients 500g Pork Fillet 2.5 cm Ginger Root; peeled and sliced into fine matchsticks pieces 2 Tbsp Oyster Sauce 2 Tbsp Soy Sauce 1/2 tsp Sugar 1 tsp Chinese 5 Spice 2 Tbsp Chinese Shaoxing Wine 2 tsp Dark Soy Sauce 2 Spring Onion; pale part finely sliced; green part cut into 3cm pieces 2 Tbsp Olive Oil 2 cloves Garlic; minced Marinade Ingredients 2.5 cm Ginger Root; peeled and minced 1 Tbsp Soy Sauce 1 tsp Ground Black Pepper 1/2 tsp Baking Soda 1 Tbsp Cornstarch Steps Begin by slicing the pork fillet into medium sized pieces. Place the meat in a large bowl along with the minced ginger, soy sauce, black pepper, baking soda and cornstarch. Combine well and set aside to marinate in the refrigerator. To make the stir-fry sauce, add the oyster sauce, soy sauce, sugar, Chinese 5 spice, Chinese Shaoxing wine, and dark soy sauce to a separate bowl and mix. Add olive oil to a large pan or wok and fry the ginger matchsticks, garlic and spring onions until they soften slightly. Add in the marinated meat and fry until golden brown. Add in the stir-fry sauce and allow it to thicken slightly before adding in the green spring onion pieces. Serve and enjoy!
